How To Make Waakye From Scratch - Ghanaian Waakye Recipe 

Introduction

Ghana Waakye is a savory food made up of beans, rice, tomatoes, and spices. It is a popular dish in Ghana and has become a staple in many African households.


Ingredients For Making Waakye:

The ingredients you'll need to make Ghana Waakye are:

- 2 cups white rice

- 2 cups black-eyed beans

- 1 large onion, diced

- 2 large tomatoes, diced

- 2 cups shredded cabbage

- 1/2 cup gari (roasted and pounded cassava)

- 1/4 cup palm oil

- Salt and pepper to taste

- waakye leaves

- 2 cloves of minced garlic

- 1 teaspoon of black pepper

- 1 teaspoon of salt

To make Ghana Waakye, start by rinsing and soaking 1 cup of black-eyed peas in cold water for at least 8 hours.

This will help to soften them and make them easier to cook. When you are ready, drain the peas and place them in a large saucepan with 6 cups of water and bring to a boil. Reduce heat and simmer for 1 hour.

Meanwhile, wash 1 cup of long-grain rice and add to a saucepan. Add 2 cups of water, waakye leaves and bring to a boil. Reduce heat and simmer for 20 minutes or until the rice is cooked. Remove the waakye leaves.

Once the peas and rice are cooked, drain off any excess water and transfer to a large pot. Add 2 tablespoons of oil, 2 chopped tomatoes, 2 chopped onions, 2 cloves of minced garlic, a pinch of chili powder, 1 teaspoon of black pepper, 1 teaspoon of salt. Give everything a good stir.


Add 4 cups of water and bring to a boil. Reduce heat and simmer for 30 minutes, stirring occasionally.

Finally, garnish with fresh parsley, diced tomatoes, and Beef/Fish. Yumm!
