Simple EbunuEbunu Soup Recipe

Introduction

Ebunu Ebunu which literally means green green. Ebunuebune soup is produced using cocoyam leaves called kontomire in Akan Language in Ghana. The cocoyam leaves gives the green shade of the soup.
Preparation

Under high heat in a saucepan, boil spinach or nkontonmire until soft. Drain and set aside

Blend together ginger,garlic, 1 onion and pepper. Set aside

Season your meat or chicken with spices, salt to taste and blended mixture, preferably overnight or 2 hours.

Under medium heat, steam or boil meat. Add fresh tomatoes and remaining onion.

 In a separate saucepan, Boil the snails in the shell. Pry them from the shell.

Sprinkle a generous amount of salt over snail and work it through with your hand for about 2 minutes. Wash under cold water and pour the lemon juice over it.

Add snails and crabs if using to steaming meat. Cover with lid and allow it to boil for 5 minutes.

Blend your cooked spinach or your nkontomire. Pour the blended spinach mix into the soup and add at least 2 cups of water into the soup

Remove the cooked onions and tomatoes from the soup and blend it together. Pour the blended mix back into the soup.

Wash the smoked fish and add to the soup. Add prekese


Allow it to boil until soup thickens. Adjust salt and seasoning. Serve it with any food of choice.
